Near Carcassonne, in the small Languedoc village of Montlaur, two ancient mills in the domain of 'la Couscouillette'.  Described by the Times Online as one of 31 most unusual holiday homes in Europe:

Historically interesting 13th century stone Windmll;  'Sloping Roof Mill'. Charmingly renovated,  providing a fabulous holiday home for 4 people. Two levels, bathroom has a door and  the 2 levels provide open-plan sleeping areas.

We put a complementary bottle of our own traditionally made red wine in the Mill for you. From Grenache Noir grapes in our small adjoining vineyard.
 
You can't get more unique than these medieval mills. Small but perfectly equipped in the gorgeous setting of unspoilt Mediterranean nature they provide a holiday you will never forget.
 
Luxurious, heated swimming pool May till Oct. ! Near air temperature! Private grass tennis court, not Wimbledon of course. Home made and bumpy! football goals and basketball on tennis court. English satelite tv. Barbecue available.

10 acre domain la Couscouillette of glorious countryside, on a hill, private, yet at the edge of a small village in Aude, magnificent views. Beautiful sunsets with our Camargue horse outlined against the horizon.

Dating to 13th century, one of the first windmills in the South of France.

Gastronomic delights in the region are numerous. This is a great opportunity to enjoy the luxury of world famous French Cuisine at very reasonable prices. Exciting new Italian restaurant called 'Bourdasso' in a Chateau just down the road.
 
Around the mills: The ancient miller's house, where we live, is near the mills. Our 10 acres of 'garigue' surrounding the mills has wild thyme, rosemary, mint and lavender among many other plants growing wild and has supposedly medicinal properties. It certainly emits a gorgeous perfume. We have our own little vineyard. You will be given a complimentary bottle of our delicious red wine. Grown and prepared in the ancient classical way!
 
We have dogs, cats, chickens, and parrots. So, though we adore animals you will not be able to bring yours. Our little dogs, Lolita and William, both Coton de Tulears, adore visitors and will welcome you to our grounds. 
 
Village Activities: The friendly, wine producing village provides walks, excursions and village open air dances and (occasionally) meals in the summer.  Walk down the hill to the local shops. The small supermarket, there's a, butcher, post office and pharmacy. Our lovely old horse is a Camargue and very friendly, loves to be given bread and carrots. Not suitable for riding but horses can sometimes be rented locally.
 
Fantastic sightseeing: for instance the famous medieval walled city of Carcassonne is reached in 25 minutes. There are beautful abbeys nearby and of course the Cathar Castles, from the early middle ages, are worth a visit. In fact, the mill itself dates from the Cathar period (1266) and is probably the first windmill in the South of France.
 
Drive through beautiful countryside to the Dinosaur museum at Esperaza. It's at an hour's drive from here and it will take you back 70 million years.

 If you want to book other than Saturday to Saturday please let me know. Sometimes I can accommodate this. At the moment Holidayfrancedirect hasn't got the facilities to let you book other than Sat to Sat but they are going to be more flexible in the future.

Adjoining first floor bedroom: shower, washbasin and lavatory. This is the only room with a door. The other 'rooms' are the different levels in this ancient mill.

In 1988 Allan and I moved here permanently. He carried on teaching his students abroad via video conferencing (Physics Prof) and lecturing occasionally as well as doing research. I stopped my Clinical Psychology Psychotherapy practice and went in for spinning, weaving, goats, horses, chickens, gardening etc. This 'back to nature' period left us with the chickens (eggs!), 1 old horse, a vineyard (wine) and a beautiful wooded area around the mills, having planted almost 1000 trees.

Why this location? Gorgeous, unspoilt countryside, yet a walk away from the village shops. Near the Mediterranean. 10 acres of domain so room for a superb pool, tenniscourt, vineyard and garden.
20 minutes drive from Carcassonne, which is a lovely little town with the famous Cité and plenty of shops, markets and supermarkets.
Unique benefits of property Astoundingly beautiful around the Mills. Rosemary and thyme, birdsong, even nightingales. Very relaxing.

My husband and I stayed at The Sloping Roof Mill in September 2017 for 10 days, and had a wonderful relaxing holiday.
We loved the rural location and view overlooking the vineyards.
The Mill was very well equipped and the pool area was marvellous with other areas available to sit and relax in the gardens
Margaret and Alan were very helpful , made us feel very welcome and the dogs were constant companions. We had a great time helping harvest grapes.
Montlaur has a small supermarket, but the Bistro is closed, there was also a local butcher and a market on Tuesday evenings.
There are local restaurants close by which require a car journey, Carcassonne and Le Cite are amazing, also worth a visit is Lagrasse, Roubia( great restaurant, La Fourchette Folle) Minervois, medieval town, Lovely restaurants, and Homps ( La Peniche) for trip on Canal du Midi, Trebes has an excellent supermarket. Loads of local vineyards to visit
Would thoroughly recommend and hope to return one day !

The mill is in a fantastic location with amazing views across the surrounding countryside. The renovation of the mill is extremely well done and it is well-equipped, despite its size, so we had all that we needed for a two week stay. We loved the quirkiness of the place.

The pool is beautiful and well maintained and the solar panel heating made it even more inviting. The owners have put a lot of effort into providing a number of seating areas around the grounds, as well as having the private terrace for the mill.

There is a bit of a drive to the large supermarkets, but there is a shop in the village which is only a short walk away. We visited castles, museums, cities and beaches so there's a wide variety of things to do within driving distance.

The owners were very helpful and friendly, from our first contact to the end of our stay. We would definitely recommend the mill to others.
